About Us

For over 20 years, Los Chaparros has been part of Honolulu’s dining scene — serving the Mexican comfort food people come back craving and creating a space that feels welcoming, relaxed, and full of life.

Founded in 2005 by Mario, a Mexico City native, and Lisa, raised in California, Los Chaparros was built on a shared love of Mexican food, hospitality, and bringing people together around the table. The name itself — “Los Chaparros,” loosely translated to “The Shorties” — was inspired by an affectionate nickname tied to their short stature, and the name stuck.

Over the years, Los Chaparros has continued to evolve while staying rooted in the flavors and atmosphere that made it a local favorite in the first place. Whether you’re stopping in for a casual lunch, family dinner, margaritas with friends, or takeout after a long day, our goal has always been simple: create food and experiences worth coming back for.
